New technology helps to reduce salt while maintaining taste/22

New research coming up by scientists from Washington State University could help bring down sodium in processed foods while keeping texture and taste. The menacing of a high-sodium food diet has been well documented

High sodium foods

  • Smoked, cured, salted, or canned meat, fish, or poultry including bacon, cold cuts, ham, frankfurters, sausage, sardines, caviar, and anchovies.
  • Frozen breaded meats and dinners, such as burritos and pizza.

An ordinary problem that occurs with the response, is the current research used to help preserve food. The researchers work on microwave-assisted thermal sterilization (MATS) to kill pathogens beyond reducing flavor intensity.

Since the MATS process holds less time, the impact on food flavor and texture is reduced. Additionally, when pepper flavor is kept, less salt is needed. Carolyn Ross, the author of the study, suggested that the retort process takes prolonged to rise to the appropriate temperature and prolonged to cool down, resulting in texture and flavor changes in the food.

Ross believes it holds the potential for bringing down salt and maintaining flavor in foods.

 The flavor of other herbs is enhanced the researchers believe that a salt reduction of up to 50% could be attained using the MATS processing method.
